Serves: 2 people as a main or 4 people as a side dish.
*Pre-prepared Pineapple boat for serving. (1 pineapple boat per person or shared if serving with other food).
*1 cup pineapple pieces (Fresh pineapple preferred).
*4 cups of cooked rice.
*4 tablespoons of oil.
*2 shallots, thinly sliced.
*3 cloves of garlic, minced.
*1 red or green chilli (Remove seeds if wanting recipe less spicy).
*1/2 cup roasted unsalted cashews.
*1/2 cup frozen peas.
*1 egg (Beaten).
*1/4 cup currants or raisins.
*3 tablespoons of chicken or vegetable stock.
*3 tablespoons of fish sauce.
*2 teaspoons of curry powder.
*1 teaspoon of sugar.
*3 spring onions, finely sliced.
*1/3 cup fresh coriander.
*8 to 12 fresh prawns, de-shelled (Optional).
